Chicken rice

I’ve always stuggled cooking with chicken mince, I always end up reverting to an Asian influence. This is a quick weeknight throw together! 

INGREDIENTS

550g chicken mince
3 tablespoons lime or lemon juice
2 tablespoons sriracha sauce
2 tablespoons fish sauce
1 red onion, finely diced
1 brown onion, finely diced
1 teaspoon garlic, minced
1/3 cup sweet chilli sauce
Oil
White rice
Water

METHOD


  1. Cook 2 cups of rice accordingly to packet. If you want more flavourful rice, go half coconut milk, half water.
  2. Add a splash of oil to a pot and brown onions and garlic for two minutes. Add mince, ensuring that you break it down well while cooking. Cook until mince is browned.
  3. Add all other ingredients, except rice, and let simmer at a low heat for 5-10 minutes stirring occasionally.
  4. Serve on top of rice and enjoy!
