Lime and coconut poppyseed muffins


Like lime, but not too much?! These are the muffins for you 😀 

These muffins only have a hint of lime taste in them, so if you aren't the biggest citrus fan you'll like these. If you are a citrus fan you apcan add another lime and a tablespoon of zest and it won't affect the ratio of other ingredients.


INGREDIENTS 
2 eggs
2 limes, juiced
1 1/4 cup self raising flour
125g butter, room temperature 
1/2 cup caster sugar
1/2 cup fine coconut 
1/4 cup poppyseeds
Zest of one lime

Icing
1 lime, juiced
1 cup icing sugar
125g butter, room temperature 


METHOD

1. Preheat oven and grease a 12 hole muffin tin.

2. Beat butter and caster sugar in a bowl until well combined. The mixture should have a pale yellow colouring. Add eggs and beat again until combined.

3. Sift in self raising flour. Add coconut, poppyseeds and lime juice. Fold together.

4. Using a tablespoon, scoop one tablespoon of mixture into muffin tray per hole. Bake at 180c for 25-30 minutes. 

5. Remove muffins from oven and let cool on a cooling rack.

6. To make the icing, combine all ingredients folding together until well combined. 

7. Once muffins are cool, ice and serve!
