Apricot & Oat Muffins

I was originally making apricot muffins, but then I saw the oats in the pantry looking neglected (as they are!) so I included them in, I think they taste great together, so hope you agree!


INGREDIENTS


2 eggs, beaten
1 cup apricot halves cut into fours
1 cup self raising flour
1 cup plain flour
3/4 cup raw sugar
3/4 cup milk
1/2 cup oil
1/2 cup oats




METHOD


1. Preheat oven to 160c. Line muffin tin with patty cases and spray with oil.
2. Sift flours into mixing bowl. Make a well.
3. Add in all other ingredients and fold gently until combined.
4. Divide mixture between patty cases and bake at 180c for 20 minutes.
Leave in the oven (turned off) for a further 10 minutes.
Serve and enjoy!
