Broccoli and Feta patties




INGREDIENTS

1 head of broccoli, chopped
200g Greek feta, diced
1/4 cup flour
1/4 teaspoon ginger
1 teaspoon mixed spice
2 tablespoons Vegeta stock
2 eggs, beaten

METHOD 

1. In a food processor, blitz broccoli heads until fine. Repeat process with feta.

2. Add both broccoli and feta into a mixing bowl. And all other ingredients and mix well.

3. Grab a spoonful of mixture and shape into a ball. Repeat until all the mixture is shaped. 

4. Heat oil in a frypan and cook three patties at a time. Using the back of a spatula flatten the balls into patties. Fry for 1-2 minutes each side.

Serve! Goes perfect with a salad, in a burger or on their own!
